Monday Brunch – 30 November 2015

This morning, I managed to force my lazy arse off my comfy bed at 6:30am to swim after taking a 1-week break. But it was still drizzling. I was disappointed, yet a tad happy that I needn’t have to jump into the icy cold water so early in the morning while everyone else was still in lalaland. I did a round of laundry and my usual morning stuff. Thankfully, an hour later, the rain stopped. I quickly went down and swam 22 laps while the hubs worked out in the gym. I am glad that I started swimming again today. The hardest part is starting the momentum. Once the momentum is going again, it’s easier to continue everyday.

We were supposed to have brunch with the hubs at some coffee shops  near NSK and thereafter shop for groceries at NSK. But something cropped up last minute and he could only have brunch with us at a cafe in our neighborhood.

After 2 days of meals laden with meat and cholesterol, I opted for a Vegan Treehugger today…

Above – Vegan Treehugger composed of homemade baked beans (from white cellini beans), oven dried cherry tomatoes, lots of juicy pan-seared mushrooms, homecooked mashed potatoes, avocado, toasted multi-grain bread and arugula leaves. The set came with a fresh fruit juice and tea.

Tonight’s menu will be:

1. Pan-fried fish with garlic and tau cheong sauce
2. Grilled palm sugar, black pepper and soy sauce chicken boxing
3. Oil + sea salt blanched organic broccoli

It’s already 5ish pm. I better move my butt off my comfy massage chair and start prepping dinner.  Do hop over again tomorrow. Happy Monday everyone!
